Fresh Garlic Aoli

A midsummer treat for that freshly harvested garlic.

Recipe for Aoli using fresh garlic.

You will need

2 cloves of fresh young garlic

pinch of salt

3 eggs (room temperature)

A little Dijon mustard

300 ml of olive oil – not extra virgin

2 Tablespoons of lemon juice.

Peel and crush garlic with the salt.

In a small bowl, whisk eggs, garlic, mustard and salt, Whisk until starting to thicken.

Add oil very slowly – only a few drips at a time as you normally would making mayonnaise.
